New Recipe- Succulent Caribbean Pork Tenderloin

Here's a new family recipe that you've just got to try. Trust me, you're gonna LOVE it! I made for dinner the other night Caribbean Pork Tenderloin with sauteed Asparagus, Spinach Berry Garden Salad and Fruit Medley for desert. It was absolutely AMAZING, we totally devoured it!!

Caribbean Pork Tenderloin:

1 plain pork tenderloin (the one I prepared was just over 2 lbs)
3 & 1/2 cups Baron's International Kitchen's Mild Caribbean Jerk Sauce Marinade
4 & 1/2 tablespoons Coco Reàl (Cream of Coconut typically used to make Pina Coladas)
3 & 1/2 tablespoons Caribbean Rum (I had Appleton Estate Jamaican Rum on hand but any dark Caribbean Rum will do)

1. Marinate the tenderloin for 1 hour in 2 & 1/2 cups of marinade (discard this marinade after use).
Preheat the grill to medium.
2. Grill pork tenderloin over medium heat until cooked (follow recommended cooking instructions on packaging)
3. Combine the remaining 1 cup marinade with the Coco Reàl and Caribbean Rum and simmer over medium low heat while continuously stirring until thick and syrupy. Remove from heat.
4. Slice the cooked tenderloin, spoon the syrupy sauce atop the tenderloin then brush to spread and coat
Garnish with fresh herbs. I used fresh mint from my garden. Serve

Serves 4

 Sauteed Asparagus:

1 tablespoon olive oil
1 bunch asparagus trimmed

1. Preheat grill to medium
2. Brush asparagus with olive oil, place on the grill
3. Grill covered 4-6 minutes, or until tender. Turning occasionally. Serve

Serves 4

 Spinach Berry Garden Salad:

5 cups baby spinach leaves
3/4 cup fresh red raspberries (can substitute fresh blackberries)
1/2 cup fresh blueberries
5 slices cooked bacon, crumbled
1/3 cup crumbled blue cheese (can substitute goat cheese)
3/4 cup balsamic vinaigrette

In a large serving bowl, combine the spinach, berries, bacon and cheese. Drizzle with the balsamic viniagrette then toss gently. You can season with freshly ground pepper (if desired) to taste. Serve

Serves 5

Fruit Medley:

7 peeled and chopped kiwis
2 11-oz cans mandarin orange sections drained, reserve juice
1 cup pitted and halved fresh cherries

In a large serving bowl, combine the kiwi, orange sections and cherries. Drizzle with the reserved mandarin juice to taste. Toss and refrigerate. Serve chilled.

Serves 5

As always, let me know how you enjoy this meal when you make it.

Enjoy!

Now available in Brooklyn, NY!

Awesome news! I just landed my first retailer in the New York City area. Now, all our friends in the City and surrounding boroughs can buy my tantalizing gourmet specialties at the Pacific Greene Gourmet Market- 151 Court Street in Brooklyn, just down the road from Borough Hall.

I had been hearing from all of you who live in and around the City that I just had to get my products on the shelves of retailers closer to you and the Pacific Greene Gourmet Market is exactly the type of store I was looking for. The first thing I noticed on my recent visit was the amazing variety of fresh vegetables and fruit that entice as you walk by outside. It was all bursting with color and looked so appetizing! Inside I found everything from specialty oils and sauces to salami to fine coffees to cheeses made all around the world (you know how much I LOVE specialty cheeses!) and the olive bar looked positively scrumptious. It's a great place to find those specialty ingredients you'll need to make an authentic International meal at home.

Thanks to Manager, Billy for featuring Baron's International Kitchen at the Pacific Greene Gourmet Market and congratulations on being the first gourmet outlet in the City to feature my delectables which are based on family recipes from destinations around the world. Next time you're in or around the Cobble Hill section of Brooklyn, I hope you'll visit the Pacific Greene Gourmet Market and check out their wide selection. Pick up my gourmet, award-winning marinade to make an authentic Caribbean meal at home. If you haven't seen the new packaging, stop in and take a quick look.

I'll be adding other retailers near you so keep those requests coming and stay tuned to find out about other new locations.

Now available at the Mohonk Mountain House

I'm super psyched that my gourmet, award-winning Caribbean Jerk Sauce Marinades, Portuguese Repolho Relish and Caribbean Hot Sauce are now on the shelves at the Mohonk Mountain House right here in upstate New York’s scenic Hudson Valley.

My hubby Josh and I have been guests at the Mohonk Mountain House in celebration of wedding anniversaries and birthdays and we always have a great time. Whenever we visit the Mohonk Mountain House, I always stop in to their Gift Shop to browse and peruse the beautiful items and I always think to myself, "oh boy, wouldn't it be SO cool if the Mohonk gift shop carried my gourmet, award winning delectables?"

Well, a few weeks ago, Josh and I were guests at the Mohonk Mountain House and as usual, we stopped into the gift shop to browse. When I saw the section of the gift shop that features local authors and artisans, I just had to check it out. There are many different types of items- from jewelry to photographs to gourmet specialty yummies. It's quite a diverse representation. I connected with Buyer, Silvia who enjoyed my samples and felt the product line was a good fit. I was so excited to get her call and first order! Though you can order items from the gift shop online via Mohonk Mountain House's online store, my products are not listed in the online store. I'll keep you posted on that.

If you're headed to the Mohonk Mountain House, I hope you'll stop by the gift shop and check out all the items by local authors and artisans. If you haven't yet seen my new packaging, take a look while you're there. If you haven't yet tried my gourmet, award-winning Caribbean Jerk Sauce Marinades, Portuguese Repolho Relish and Caribbean Hot Sauce, I hope you'll pick some up. My products are all based on family recipes from destinations around the world and they're packed with authentic flavor. Visit the recipe page of my website for recipes and as usual, stay tuned to my Facebook page for more delicious recipes and serving suggestions.

It sure is shaping up to be a great year so far. More exciting news coming soon so stay tuned!

Kicking off the 2012 season

I'm super psyched to be kicking off the 2012 season!

Since I launched my product line officially back in March 2010, I've had some stressful times, I've had some amazing moments and I've hit some pretty big milestones. Overall, Baron's International Kitchen has come out stronger...and so has this CEO.

There are a couple of things I'm really excited about this season...

First, we have a new look! My award-winning, gourmet marinades and condiments are featured in sleeker glass (a big thanks to Sam at Burch Bottle for all his patience). For all of you out there who requested that I make the relish in a larger jar, check out the new size. There's nearly 25% more to share with family and friends!

I know how much you like the unique triangular shaped jars- the original glass for both the relish and hot sauce...I love those jars too :) Those aren't going away but they do have a new look that's really cool. They're packaged in a 3pack gourmet international condiment sampler set (click here to see a picture of it, second item on the page). In the Gourmet Condiments Gift Set, you'll get 1 jar each of the Caribbean Hot Sauce and Portuguese Repolho Relish. The 3rd item is my West Indian Dipping Sauce- brown sugar sweet and packed with Island flavor. My Gourmet Condiments Gift Set is an exclusive specialty item so you'll only find it at select retailers (the individual jars in the gift set are sold separately in my online store). You've got to check out the Gourmet Condiments Gift Set for your favorite foodie.

For my wholesale clients, there's now volume-based pricing so they can leverage their buying power to better meet your demand.

On the sampling side, I've traded my plastic sampling cups for a greener, more environmentally friendly alternative- biodegradable sampling cups and spoons that won't add to our landfills. I did it for my kids and it felt great to do it! Thanks Drew S. at the Honest Weight Food Co-Op in Albany, NY for telling me about Ecotensil.

On the production side, I have some amazing new help to make my award winning, gourmet sauces and condiments. I wrote a while back about Nelson Farms in Cazenovia, NY, well sorry to say, they really, really let me down. I'm now working with a great bunch of folks over at Brooks Bottling in Oneonta, NY. The combination of owner, Ryan Brooks' knowledge and experience deliver a quality of service that really meets the mark. Ryan doesn't just manage Brooks House of BBQ- his family's business now in it's 3rd generation and Brooks Bottling, his co-packaging company. He's a manufacturer too and he really "gets" the pride I take in producing my high-quality gourmet sauces with delectable flavors. He and his team are flexible and easy to work with- no drama, no nonsense and they have the capacity to meet my needs as my company grows. If you're in the market for a bottling company to help produce your gourmet specialties, give Ryan Brooks and his team at Brooks Bottling a call at 800-498-2445. Schedule a tour. Tell him Terry sent you :)

Over the next couple of weeks, you may see my new jars on store shelves, you may try some of the new recipes on my website and Facebook page, you may even follow my new store announcements or read about my newest event...with all that's new, I promise one thing remains true- the tantalizingly scrumptious flavors of my award-winning, gourmet sauces and condiments. Thanks to everyone out there for all the support and encouragement, especially my hubby Josh. I wouldn't have been able to live this dream without you.

I know 2012 is going to be another amazing year so hang on and enjoy the ride!

On today's deli menu at Adams Fairacre Farms

I'm excited to be on the deli menu at Adams Fairacre Farms in Kingston, NY today.

When Paul the Deli Manager let me know this morning that he was making Hot Caribbean Jerk Pulled Pork today, I just had to stop by and get some for lunch. I paired it with mashed potatoes and veggies from the deli counter and it was delish! Tender, juicy, full of flavor and it had a nice heat level. Paul used my award-winning, Hot Caribbean Jerk Sauce Marinade but I doubt I'll get him to reveal his recipe :)

If you're in or around Adams Fairacre Farms in Kingston NY today, pay a visit to the deli counter and pick up some Hot Caribbean Jerk Pulled Pork made with my award-winning Caribbean Hot Jerk Sauce Marinade. There are lots of other sides that you can choose from but whichever you choose, you'll be glad you did. Tell Paul you heard about it here.

At your request, now available at Peter's Market

Thanks for recommending connecting with Peters Market. They're among the latest stores to feature my gourmet Caribbean Jerk Sauce Marinades and international condiments.

I enjoyed meeting family owners, Jeremy and his Dad. The Peters family opened Peters Market over 40 years ago and it's still going strong- how inspiring! Not hard to see why- there's a nice hometown feeling there. Jeremy's out in the store interacting with customers. His Dad's busy making sure customers can easily find what they need. They greet many customers as if old friends and with some, they stop and catch-up with each other. Lunchtime is a busy time so the staff works quickly to get shoppers back to work. If you're in the area, you've got to check them out.

Peters Market is located at 7700 Route 209 in Napanoch, NY not too far from Minnewaska State Park. The phone number is 845 647 6990. Give them a call and ask about the lunch specials. Learn more about Peters Market online at their website and check them out on Facebook.

Thank you Jeremy! I'm looking forward to my next in store demo at Peters Market this Saturday.

At your request, on the shelves at My Market

I wasn't able to share new achievements and cool happenings during the craziness of the holidays but there's a lot to catch up on. Most excited about the new stores stocking my award-winning gourmet sauces/marinades and condiments.

The new locations include a few you requested/introduced me to. Otto's Market, Honest Weight Food Co-op, My Market, Jack's Meats & Deli and Peter's Market became new outlets last Fall. I found Bel Cibo- a gourmet specialty gift shop loaded with unique foodie treats and GiGi's Market- a cozy foodie hangout. Baldwin Vineyards is my first winery, Bistro to go features my Portuguese Repolho Relish and the addition of Honest Weight Food Co-op, Rhinebeck Health Foods and Red Hook Natural Foods doubles the number of natural food outlets carrying my products. Cool stuff! Alot of new news to come...

Lemme start with reflections on my visit to My Market, a local grocer you requested: I'd been hearing from you about My Market for a while so I set up some time to visit with owner, Sayid. I met Sayid at My Market in early Fall of last year- he LOVES hot sauce. I was drawn to their deli counter immediately when I spied the Jamaican Beef Patties - YUM with my gourmet Caribbean Hot Sauce! Thanks Sayid for stocking my award-winning gourmet Caribbean Jerk Sauce Marinades, Portuguese Repolho Relish and Caribbean Hot Sauce. I've left samples with Sayid for sharing so be sure to pick one up next time you stop in.

Glad to be stocked at this and more of the local outlets you request.

My Market is located at 140 North Chestnut Street/State Route 32 N in New Paltz, NY and you can reach Sayid and his team at 845 255 1025. There are several other local, Hudson Valley based gourmet specialty food producers like Baron's International Kitchen featured at My Market that you've just gotta check out. Have you tried Heartbreaking Dawns yet? My latest addiction is owner Johnny Mclaughlin's Jalapeno Pineapple Hot Sauce...mmm, delightful island flavor, sweet heat.

Here's to local available locally,

Terry

Caribbean Rum Pork Chops - a quick and easy recipe you can make tonight

I made this for my hubby Josh for dinner the other night and it came out OMG, AMAZING!...and it was so quick and easy to make too. Here's the recipe:

I used 2 center cut, bone-in pork chops about 1/2 inch thick, trimmed the fat from the edges and put them in a ziploc bag (big enough for the pork chops to lie side by side). In a medium-sized mixing bowl, I combined 1 cup of my award-winning Caribbean Mild Jerk Sauce Marinade and 1 shot of Appleton Rum (doesn't have to be Appleton, if you prefer a different brand dark rum, go ahead and use it). After mixing the marinade well, I poured all except 1/4 cup of it into the ziploc bag with the pork chops, coating the meat well. Then, I sealed the bag, marinated the pork chops for 2 hours and cooked them on a preheated medium-low grill (use the reserved 1/4 cup of marinade to baste). In about 20 minutes they were done- succulent, loaded with flavor and so juicy!

I served the Caribbean Rum Pork Chops with a side of Rice Pilaf and a garden salad but it would go great with a baked Potato (white or sweet), Macaroni & Cheese, Jamaican Rice & Peas, Potato Salad, Puerto Rican Tostones, Plantains, Roasted Peppers and Sauteed Asparagus too. If you enjoy other sides with this meal, post a comment here or on my Facebook page and let us know.

As an aside, if you haven't already, you've just gotta make Sauteed Asparagus using Balsamic Shallot Herb butter. Steve Ferri, Chef owner of local Hudson Valley specialty company the Scotch Hands Butter Company, produces this and other flavored compound butters. They come ready to use with all the seasonings you need in them already so it's as easy to use as scooping it out of the container. Not only is the butter easy to use, it also gives the Asparagus an awesome flavor and they're done in 10 minutes. I've used the Balsamic Shallot Herb butter with String Beans too and it works great.

It's so fun to cook delectably soul-satisfying creations, especially in the winter. Of course, when it warms up to the mid 50s here in the Catskill Mountains for 2 days back to back in the middle of winter (which happened last week), it's especially hard to resist firing up the Weber :) Ahhh, Spring can't be far away.

What's your latest creation using my gourmet award winning Caribbean Jerk Sauce? Drop me a line on my Facebook page and let me know. Feel free to share a picture or 2 too. I'll continue sharing all your delectable creations here so continue checking back for other quick and easy to make recipes- all road tested by us.

See you at my next in store demo,

Terry

Jerk Chicken with Rosemary Potatoes & Roasted Cauliflower recipe

Thanks to so many of you out there who have shared the deliciously delectable recipes you've been making using my award-winning, gourmet Caribbean Jerk Sauce Marinades, Caribbean Hot Sauce and Portuguese Repolho Relish. They're so creative, yummy and easy to make.

Today I'd like to share a recipe from my friend, Corinna S., from Stone Ridge, NY. Corinna used my gourmet Caribbean Mild Jerk Sauce to make Caribbean Chicken with Rosemary Potatoes & Roasted Cauliflower. Corinna said that " it was absolutely delicious" and "so quick and easy to make". I'm planning to make this one myself, Corinna! It sounds really yummy!

Corinna marinated chicken thighs overnight in my gourmet, award-winning Mild Caribbean Jerk Sauce Marinade. She then baked these in the oven. For the rosemary potatoes, Corinna used red potatoes. Best to sliced the potatoes in halves or quarters (per your preference) before baking. The roasted cauliflower takes just a few minutes on the grill.

Thanks, Corinna. I'll upload pictures when I make this meal. If you make Corinna's recipe, I hope you'll share your experience and pictures too.

My award-winning gourmet Caribbean Jerk Sauce Marinades, Caribbean Hot Sauce and Portuguese Repolho Relish are now available at more of your favorite local retailers. If your favorite local retailer doesn't carry my gourmet marinades or condiments, let me know. You can also stop by during my next in-store event and try a free sample. Keep those recipes coming! Food helps warm our souls.

As we move into the heart of winter here in the Northeast, here's to roaring fireplaces & succulent food with friends and family while we ride out winter in our caves :)

Caribbean Jerk Chicken crockpot recipe

I've been hearing from so many of you out there about the delicious meals you've made using my award-winning, gourmet Caribbean Jerk Sauce Marinades and Portuguese Repolho Relish and the multitude of ways you're enjoying my Caribbean Hot Sauce. I will start sharing your recipes and experiences here and on my Facebook page.

Use my award-winning, gourmet Caribbean Jerk Sauce Marinades to invigorate your crock pot/slow cooking. That's just what Kim W. did. I met Kim W. at the 2011 Hudson Valley Wine and Food Fest. She purchased my gourmet, Caribbean Mild Jerk Sauce Marinade for the first time and a few days later, she emailed me to say:

Your wonderful marinade was absolutely delicious! I took 8 chicken tenderloins and evenly arranged them at the bottom of the slow cooker. Once arranged, I covered them with a layer of the marinade and cooked on low for 3 hours (or until the chicken is thoroughly done). The meat was tender, the flavor was bursting and by the end of the night, it was all gone!!

Thank you, Kim! I'm so glad to know you enjoyed it. Your recipe sounds yummy, I'm looking forward to trying it! Thanks for sharing your recipe and experience.

Would you like to leave a comment or share your experience too? I invite you to post a comment here or on my Facebook page with your recipe and of course include a picture too, if you happen to have one.

You know, now that it's winter here in the Northeast, feels like we spend more time snuggled in our "caves" :) Good food helps warm our souls, so this winter, don't plan on making the same ole thing for gatherings with friends and family. Instead, pick up one of my award-winning, gourmet Caribbean Jerk Sauce Marinades, Caribbean Hot Sauce or Portuguese Repolho Relish and make a delectable international meal tonight!

Here's to being out of the cold with a roaring fire, fine wine and scrumptious food!
